The Buffalo Chicken on Weck sandwich is so good it is hard to leave the comment section and not want more. In fact, after I wrote that last sentence I wanted to dig in my freezer to see if the local grocery store had them on hand. They did!

Beef on weck served many different purposes during the civil war. While there was a lot of beef on Weck, there were also quite a few sides and vegetables. If you put some tomatoes, bell pepper and onions together, this became known as a “Bread Loaf”. Another use of this sandwich as a meat alternative came from General Gordon, who led the Confederate troops. He would take one slice of bread and put beef, two slices of tomato and two slices of onions on it and allow the soldiers to choose their favorite.

There are many different ways to make beef on weck. One way is to use leftover beef from the day before or pork. Use the top round of a crock pot to roast your beef and keep it warm while you prepare your other side dishes. When you are ready to start cooking, remove your beef from the crock pot but leave the bottom bit of meat in the pan. Add two tablespoons of butter to your Crock Pot and place in onions, bell pepper and tomatoes.

When your Crock Pot has heated up, add your cooked beef and onions and continue to cook, stirring often. When done, remove the crock pot from the oven and wipe out the crock pot. Using an oven mitt, place your frozen jus in the center of the pie and pop in your beef and onions. Cover for about an hour or until jus are soft and mushy.

A more common way to make a beef and onion sandwich is to use cheddar cheese on your bread. Spread a tablespoon of cheese over your whole wheat bread as you are tearing off the first slice of bread. Then add your beef and parsley on top of the cheddar cheese. Place in the slow cooker and cook on low for about 8 hours or until done.
